速食燕窝真空冻干生产工艺设计
摘 要
本设计主要是进行真空冻干速食燕窝的生产工艺的设计。根据市场的需求和产品的工艺要求，在进行实地参观相关工厂和查阅大量资料后，完成了本次设计内容。
本设计的内容主要包括:在了解了燕窝的发展历程和现在的市场需求后，进行该工厂建设的可行性分析;分析并选择建厂区域，然后确定具体的厂址，并设计全厂的总平面布局;根据我国燕窝市场的进口量以及供求情况确定生产的产品方案;在查阅相关资料后制定产品生产的工艺流程，同时还进行了物料计算和生产设施设备的选型;对于工厂的辅助部门、工厂卫生等也做了相关阐述;最后使用制图软件Auto CAD绘制了6张工厂相关图纸。
本次设计将真空冷冻干燥技术运用到即食燕窝的生产工序中，极大的保留了燕窝本身的营养价值，并提高产品的食用便捷度。在生产过程中选用机械化、自动化程度较高的生产设备，并对工厂的整体布局进行比较合理的规划，致力于建设规范化、高效率的现代食品工厂。
DESIGN OF PRODUCTION PROCESS FOR PRODUCING FAST FOOD EDIBLE BIRD’S NEST WITH VACUUM FREEZEDRYING TECHNOLOGY
ABSTRACT
This paper is mainly for the design of production process for producing fast food edible bird’s nest with vacuum freezedrying technology. According to the market demand and product process requirements, the design content was completed after conducting field visits to related factories and consulting a large number of materials.
The content of this design mainly includes: after understanding the development history of the edible birds nest and the current market demand of edible birds nest, conduct a feasibility analysis of the construction of the plant; analyze and select the plant area, then determine the specific plant site, and design the overall plan of the whole plant; determine the production product plan according to the import volume and supply and demand situation of edible birds nest market in China; formulate the production process flow after consulting relevant information, and also carry out material calculation and selection of production equipment; also describe the auxiliary department of the factory and the hygiene of the factory; at last, 6 factoryrelated drawings were drawn by using the drawing software Auto CAD.
