脆嫩盐水鸭工厂设计
摘 要
本设计为年产1000吨低钠脆嫩盐水鸭工厂设计,本设计的亮点在于使用隧道式热风干燥技术代替蒸煮。隧道式热风干燥利用空气作为热源熟制盐水鸭,避免了鸭胴体浸泡在卤水中煮,从而大大减少成品鸭的含盐量。本设计在设计的各个方面,充分考虑员工福利、生产安全、生产便利、卫生、质量、未来发展等因素。以主要生产车间为中心,辅助设施围绕左右,所有道路均为环形设计,有利于最大化方便生产、节约成本。厂区留出足够可供发展空间,可以迅速扩建、改造,有利于工厂未来发展。设备选型,选择自动化程度高,环保节能,无清洗死角,移动、装卸方便的设备。员工生活区配备有小型超市、体育活动等区域。生产区、生活区和办公区分别设置绿化带隔离。整个设计从实际出发,充分考虑细节,可行性强。本设计主要包含建厂的可行性分析、厂址选择、总平面设计、工艺设计、主要生产车间布局设计、环境影响分析及其保护措施、经济分析等。本设计主要绘制设备图、工艺流程图、水电分布图等图。
THE ANNUAL PRODUCTION OF 1,000 TONS OF LOWSODIUM CRISP AND TENDER BRINE DUCK FACTORY DESIGN
ABSTRACT
This is a design for a lowsodium crisp and tender brine duck factory with an annual output of 1,000 tons. The highlight of this design is the use of Tunneltype hot air drying technology instead of cooking. Tunneltype hot air drying uses air as heat source to prepare brine ducks, which avoids the duck carcass being immersed in brine when heating, thereby greatly reducing the salt content of the finished duck. In this design, actors such as employee welfare, production safety, production convenience, hygiene, quality, and future development are carefully taken into consideration. All auxiliary facilities stand surround the main production workshop, which is conducive to maximizing the convenience of production and saving costs at the same time. All roads are designed in ring shape to ease transportation. This design spares enough empty space for warehouse and future development, which is beneficial to the expansion and development of the factory. As to Equipment selection, this design chooses to employ high degree of automation, strong adaptability, easy to clean, energysaving and modern equipment. The living area is equipped with rooms, small supermarkets, sports areas and leisure areas. The production area, living area and office area are separated by plants to reduce pollution. The entire design is based on reality and is highly feasible. This design mainly includes feasibility analysis, site selection, general graphic design, process design, layout design of main production workshops, environmental impact analysis and protection measures, and economic analysis. This design mainly draws equipment diagrams, process flow diagrams, electricity and water distribution diagrams.
