摘 要
以‘上海青’为材料,研究20℃贮藏期间1MCP处理对采后小白菜黄化和生理生化变化影响。结果表明:贮藏期间5μL/L浓度的1MCP处理小白菜的色泽L*值低于对照,而H值高于对照,第4d效果显著(P<0.05);1MCP处理小白菜的呼吸强度低于对照,叶绿素含量高于对照,第4d效果显著(P<0.05),故1MCP处理对抑制小白菜黄化的效果显著。1MCP处理小白菜的超氧阴离子含量、H2O2含量、MDA含量低于对照,且AsA含量和GSH含量高于对照,SOD活性和APX活性高于对照,表明1MCP处理降低了小白菜氧自由基的水平和提高了消除氧自由基的能力。因此,5μL/L 1MCP处理能有效抑制小白菜采后黄化现象和衰老的发生。< *51今日免费论文网|www.51jrft.com +Q: &351916072
br /> EFFECT OF 1MCP ON YELLOWING AND PHYSIOBIOCHEMICAL CHANGE OF POSTHARVEST PAKCHOI
ABSTRACT
‘Shanghaiqing’was used in this experiment to investigate the effect of 1MCP on yellowing and physiobiochemical change of postharvest Pakchoi at 20 ℃. The results showed that the L*value of Pakchoi treated with 5μL/L 1MCP was lower than that of the control group while the H value was higher than the control. Both reached significant difference level (P <0.05) on the 4th day. The respiratory rate of treated vegetable with 1MCP was lower with higher chlorophyll content than that of the control, and the effect was significant on the 4th day (P <0.05). All these indicate that 1MCP had significant effect on inhibiting yellowing of Pakchoi. The content of superoxide anion, H2O2 and MDA was lower than that of the control group, while the content of AsA and GSH and the activities of SOD and APX was higher than that of the control, suggesting that 1MCP treatment reduced the level of ROS and improve the ability to eliminate ROS. Therefore, 5μL/L 1MCP treatment can effectively inhibit yellowing and senescence of postharvest Pakchoi.

小白菜又名不结球白菜或青菜,属十字花科芸薹属,是一年或二年生的草本植物[1]。小白菜在中国南北各省均有栽培和种植,但主要以长江以南为主[2]。小白菜富含各种维生素和矿物质,如维生素C、维生素B1、维生素B2、烟酸等,其中维生素C的含量在蔬菜中尤为突出,有助于人体的正常发育和代谢。
