摘要
水果罐头是使用新鲜的水果作为主要生产原料的食品,通过系统性地生产,装灌,放气,密封隔绝,高温高压蒸汽灭菌,放凉等多种工序,达到商业水平上的无菌级别,从而增加食品的保质时长。水果罐头营养、安全、卫生、不易发生腐败变质[13],此外还具有体积小、易携带等优点。因此难以被季节更替和地区变化所限制,可以随时提供给消费者,在没有制冷条件下也可以长时间储存。这可以对食物的供应情况进行调整,使人们的生活质量得到提高、生活水平得到丰富。
此设计主要为年产2万吨水果罐头工厂设计。根据资源、环境、政策等条件,选择了菠萝作为主要原料。为了满足万吨级水果罐头项目所需求的结果,对厂区及车间平面构图、产品规划和生产工艺标准、设施设备型号选定、物料衡算、整厂安全健康、辅助部门单位展开研究与设计。

ABSTRACT

This design mainly for the annual output of 20000 tons of canned fruit plant design based on resources, environment, policy conditions, such as pineapple as the main raw material in order to meet the demand of each canned fruit project results, to the factory and workshop plane composition, product planning and process standards, facilities equipment model selection, material balance, the whole factory safety and health, auxiliary unit launches the research and design departments.
